Key Responsibilities of Quality Assurance & Food Safety Manager
HACCP Compliance & Food Safety Oversight
Regulatory Compliance Management:
- Ensure all restaurants across multiple regions maintain full compliance with HACCP requirements and company food safety standards
- Conduct regular internal audits, inspections, and comprehensive compliance checks to verify adherence to HACCP protocols
- Monitor critical control points (CCPs) and ensure all documentation remains accurate, complete, and consistently maintained
- Verify temperature controls, cross-contamination prevention, allergen management, and hygiene standards
Quality Assurance Systems:
- Identify non-conformities through systematic inspections and implement corrective and preventive actions (CAPA)
- Collaborate with Operations and Training teams to address food safety gaps and strengthen protocols
- Develop risk assessment frameworks and food safety metrics for continuous improvement
- Implement traceability systems for ingredients, suppliers, and finished products
HACCP Manuals, Policies & Standard Operating Procedures
Documentation Management:
- Review, update, and refine HACCP manuals, SOPs, policies, and procedures reflecting operational realities, regulatory changes, and industry best practices
- Ensure all documentation remains relevant, practical, and aligned with the company’s multi-site operational model
- Develop and roll out new or revised procedures ensuring clarity and ease of implementation for restaurant teams
- Maintain comprehensive records of all food safety documentation, revisions, and version control
Training Integration:
- Collaborate with Training Department to integrate updated food safety content into onboarding programs and ongoing learning modules
- Create practical tools, checklists, and guides making compliance easy and consistent for frontline staff
- Develop visual aids, flow charts, and quick-reference materials for kitchen and service teams
Audit Preparation & HACCP Accreditation Management
External Audit Coordination:
- Serve as primary liaison with the company’s appointed HACCP accreditation authority and regulatory bodies
- Plan, coordinate, and facilitate annual surveillance audits across all restaurant locations
- Ensure each restaurant is fully prepared for audits through pre-audit assessments, coaching, and documentation reviews
- Lead follow-up processes post-audit, ensuring timely closure of findings and continuous system improvement
Accreditation Maintenance:
- Maintain HACCP certification status across all operating regions and ensure renewal compliance
- Prepare audit reports, management reviews, and compliance summaries for senior leadership
- Implement audit findings systematically and track corrective action completion rates
Dubai Food Watch Training Centre Management
DFW System Administration:
- Manage the company’s Training Centre profile and activities on the Dubai Food Watch (DFW) network platform
- Ensure all training programs, trainer registrations, and compliance requirements stay up-to-date with Dubai Municipality standards
- Maintain accurate records, approvals, certifications, and course completions within the DFW system
- Coordinate with internal teams ensuring all food handlers complete required DFW-linked training and renewals
Regulatory Training Compliance:
- Track food handler certificates, health cards, and mandatory training renewals across all staff
- Liaise with Dubai Municipality and regulatory authorities on training compliance matters
- Generate compliance reports and training statistics for management review
Cross-Functional Collaboration & Stakeholder Management
Operational Integration:
- Work closely with Operations to embed food safety practices into daily routines and guest-facing standards
- Partner with Procurement to ensure suppliers meet food safety requirements and support ingredient traceability
- Support New Store Openings (NSOs) by implementing food safety systems from day one
- Provide expert guidance to franchisees and internal teams on food safety expectations and compliance frameworks
Multi-Department Coordination:
- Collaborate with Culinary teams on recipe development, cooking processes, and temperature control standards
- Work with Maintenance teams on equipment calibration, cleaning schedules, and facility hygiene
- Partner with Beverage teams on safe handling, storage, and service of alcoholic and non-alcoholic beverages
- Support HR with food safety aspects of employee onboarding, training records, and competency assessments
Training, Coaching & Food Safety Culture Building
Staff Development Programs:
- Deliver targeted training sessions on HACCP principles, personal hygiene, and food safety best practices
- Coach restaurant leaders to build proactive food safety awareness and accountability culture
- Conduct train-the-trainer sessions empowering location managers to cascade food safety knowledge
- Develop e-learning modules, video tutorials, and interactive training materials
Culture Transformation:
- Foster a mindset where food safety is everyone’s responsibility, not just compliance requirement

Legislative Updates:
- Stay updated on G.C.C. food safety regulations, Dubai Municipality requirements, and international industry trends
- Ensure all restaurants meet or exceed local regulatory standards in each operating region (UAE, Saudi Arabia, regional expansions)
- Monitor changes in food safety legislation and implement necessary adjustments proactively
- Maintain strong relationships with regulatory bodies, external auditors, and industry associations
Best Practice Implementation:
- Benchmark against hospitality industry leaders and adopt innovative food safety technologies
- Participate in food safety forums, conferences, and professional development opportunities
- Share industry insights and emerging risks with senior management and operational teams
Qualification Requirements for Food Safety Manager
Educational Background:
Required Qualifications:
- Bachelor’s degree in Food Science, Microbiology, Public Health, Environmental Health, or related scientific field
- HACCP Level 4 certification is mandatory (Advanced HACCP qualification)
- Lead Auditor certification (ISO 22000 or equivalent) is strongly preferred
- Food Safety Manager certification recognized by international accreditation bodies
Additional Certifications (Advantageous):
- ServSafe Manager Certification or equivalent
- ISO 22000 Food Safety Management System training
- Allergen management and food defense certifications

Professional Experience:
Minimum Requirements:
